Spinach Soup











Sorry for the lack of posts in the last two weeks! I just finished my exams last week, so now I hve more time for all of those great things....after spending so much time focussed on exams and studying day in-day out, it feels very strange at first when all of a sudden you have plenty of time on your hands again! And it also seems to pass by much slower than before....Do you know what I mean? It's strange how your relation to time can change so quickly...mm...
Well, enough Philosophy for one day-I tried out a very simple spinach soup the other day and I was very surprised that it only takes around 10 minutes to make a proper soup, basically making this to one of those 'quick dinner' recipes!

Ingredients:
-2 spring onions, chopped
-1 garlic clove
-1 bunch spinach, chopped coarsely
-250ml vegetable broth
-lemon zest
-salt & pepper
-whipping cream
-olive oil

Instructions:
1. Sweat spring onions an garlic in olive oil. Add spinach and leave to cook for around 2 minutes.
2. Add vegetable broth and leave to simmer for around 5 minutes.
3. Pour soup into a blender and process until smooth. Return to pan and season with salt, pepper and lemon zest.
4. Pour into soup bowls and add cream.
Enjoy!
