Quinoa with Spinach and Feta







 



I just had the idea of maybe starting a 'healthy' category on the blog, somewhere this post would fall under. I don't know whether you've heard about  the 'new' trend about quinoa... I'm emphasising the new here because quinoa is a crop that has already been around since the Inca. So quite some time! I also just learnt that it isn't even really a crop, and more related to vegetables like beet or spinach than to wheat or barley...so quite a special food in itself! It apparently contains many important mineral nutrients (all amino acids!!) as well as copper and managanese, essentials for our bones. That and the high protein content make it a go-to for anyone looking to follow a healthy diet. But this 'wonder-corn' also has some more plus points to it: it simply tastes delicious! There's this nice nuttiness to it that which gives the whole meal a very specific taste....well, I'll leave it at that-just try it! 

Ingredients (for 2 portions):
-150g quinoa
-1 small onion
-1 garlic clove
-1 bunch fresh spinach
-1 large tomatoe
-50g feta
-salt & pepper

Instructions:
1. Rinse quinoa with hot water. Cook for aprox. 20 minutes in double the amount of water. Leave to swell for another 5 minutes.
2. Meanwhile, glaze onion and garlic in a small frying pan. Cook spinach in boiling water for around 5 minutes and drain. 
3. Chop tomatoe and feta cheese.
4. Fold all ingredients into quinoa and spice.
