White Bean-Paprika-Chili








This could be seen as a vegetarian version of the famous 'chili con carne'-only, this one is prepared and on the table in even less time! Using white beans instead of kidney beans and adding coriander gives the whole dish a more exotic touch, as well as making it a whole lot lighter than the traditional chili!

Ingredients (4 Portions):
-3 cellery sticks
-1 yellow paprika
-240g white beans, sieved
-250g sieved tomatoes
-1/2 bunch coriander
-chili spice
-olive oil
-salt & pepper

Instructions:
1. Cut cellery and paprika in medium sized cubes. Glaze in olive oil and leave to steam for around 5 minutes.
2. Add sieved beans, tomatoes and spice and boil up. Leave to simmer for another 5 minutes.
3. Wash and dry coriander. Chop most of it, leaving a few whole leaves for decoration.
4. Add coriander to chili and season with salt & pepper.
