Summer Noodle Salad












After several posts for the sweet tooth(ed) among you, I thought it was about time to make something more savory again! This salad is a great option for a picnic in the park, at the beach, or simply just for the office. I find the combination of black forest ham, dried tomatoes and black olives a refreshing way to combine mediterranean with german food -perfect for the summer!

Ingredients (for 3 large portions):
-300g penne, cooked
-4 slices black forest ham, chopped into small squares
-50 g parmesan cheese, coarsely chopped
-15g black olives, cut into slices
-10-15 dried tomatoes, cut in stripes
-a handful of basil
-6 Tbsp. balsamico vinager
-3 Tbsp. olive oil
-salt & pepper

Instructions:
1. Chop the ham, cheese, olives, tomatoes and basil coarsely. 
2. Mix in a large bowl along with the penne.
3. Add the salt & pepper to the vinager and pour in the oil slowly under constant stirring.
4. Spread the vinaigrette over the salad and mix properly.
