Strawberry-Walnut Cake












It's finally that time of year! 
That time when you can pick up a pound of fresh strawberries at the market with a guiltless conscience, because you know that they havn't been imported from the other end of the equator. That time when days seem never-ending, when jackets seem to disappear, when we don't have to worry about turning on the heater in the early morning, when everything seems so light and easy........The change in temperature also changes our eating patterns; we replace hot chocolates with cooling smoothies, warm soups with picnics in the green.
I thought I'd kick off 'that' time with a delicious strawberry cake that has a slightly nutty note to it. To me it certainly tastes best with strawberries, but they can also be replaced by other berries like blackberries or raspberries!

Ingredients(for 'normal'-sized baking form-24cm diameter):
For dough:
-50g walnuts, finely grinded in mixer
-4 eggs, egg yolk and white seperated
-salt
-75g sugar
-4 Tbsp. orange juice
-50g flour
-25g starch flour
-1 1/2 Tsp. baking powder

For filling & decoration:
-75og fresh strawberries
-1/2 Tsp. cinnamon
-350g sweet cream
-2 Pkg vanilla sugar
-15g icing sugar

Oven: Preheat to 160 degrees

Instructions:
1. Whisk egg whites with a pint of salt until stiff, slowly adding 25g of sugar.
2. Toss the rest of the sugar into a bowl along with the orange juice and mix thoroughly. Add nuts and egg white-mixture.
3. Fold in sieved flour and baking powder.
4. Fill into a greased baking form and bake for around 30 minutes at 160 degrees.  Leave to cool off for 15 minutes before taking out of form.
5. Meanwhile, wash strawberries and cut into thin slices, putting aside two handfuls of the biggest and best formed ones for the decoration.
6. Whisk sweet cream with vanilla sugar and add the remaining strawberries. For a cream with chunky strawberry pieces, carefully fold in with a spatula.
7. Cut the cake in half diagonally. Spread 3/4 of the strwberry cream evenly across the bottom half. Place the other half ontop and cover with the rest. Decorate with strawberries by creating a spiral starting from the outer edge of the cake. Sieve the icing sugar across the strawberries.
