Fake Oreo Cookies


 


 







It's sure been a while since my last post! Studying kept me quite busy for the past few weeks, holding me back from making and sharing some yummy recipes. 
Luckily, I did however get around to making one of my all-time favourite cookies at some point,  and I realised that they sure are one great snack for studying breaks! 

These fake oreo cookies are only similar to the original in appearance. I hope you'll agree that the chocolatey dough combined with the refreshing filling could keep it up with any originals!

Ingredients:
-110g butter, melted
-75g sugar
-30g icing sugar
-1 egg
-30g dark chocolate, melted
-140g flour
-15g cocoa powder

For the filling/icing:
-200g cream cheese
-200g white chocolate

Oven: Preheat to 165 degrees

Instructions:
1. Whisk butter with the sugars. Add egg and melted chocolate, mixing everything thoroughly.
2. Toss in flour and cocoa powder, making sure that the dough becomes homogenous.
3. Roll the dough into a long, thin cylinder and leave to chill in fridge for at least 1 1/2 hours (max. 3 hours).
4. Place baking paper on two baking trays.
5. Cut the dough into thin slices with a sharp knife. Form into even pieces in the palm of your hand and spread on baking paper. Bake for 12 minutes and leave to cool.
6. For the filling, melt chocolate and mix in cream cheese. Leave to cool off for around 15 minutes.
7. Turn around half of the cookies and supply with a heaped teapoon of filling. Place the other cookies ontop, adding slight pressure to insure that the filling is being spread to the edge of the cookie.
